Abadía Retuerta’s New Terraza De La Hospedería: Local Gastronomy, Stargazing & Outdoor Art

The Terraza de la Hospedería — the “Hostelry Terrace” — is Abadía Retuerta’s new, open-air setting for superb gastronomy. This haven of experiences, right at the heart of the Duero Valley near Sardón de Duero (Valladolid), is opening a wondrous new terrace restaurant in its hostelry garden. Its concept is all about comfort food, in a place where guests can escape the humdrum of everyday life and revel in the beautiful sunsets and magical summer nights, bathed in the warm glow of a captivating central fire bowl. All of this is accompanied by exceptional combinations of quality food and drink: the laidback cuisine, made with local produce and fresh ingredients from the estate’s own vegetable garden, is paired with a range of signature cocktails and fine wines from the Abadía Retuerta winery. This new terrace really is a must-visit for summer 2022.

The Terraza de la Hospedería, designed as a garden and in keeping with the surroundings, is a green space with breathtaking views of the Santa María de Retuerta Abbey. This stunning outdoor terrace is ideal for enjoying classic and traditional dishes of the region, and, why not, some fantastic signature cocktails too. The Terraza de la Hospedería is exclusively reserved for our hotel guests, and opens from 1pm to 11pm.

 A design that blends in with the surroundings: sustainable and natural
This wonderful space was designed as an extension of the hostelry garden. It is minimalist and sustainable, and open to hotel guests at this haven of experiences at the heart of the Duero Valley. The idea came about when the Abadía Retuerta team realised that this area, at the rear side of the Abbey, would be perfect for a new gastronomic project in which the surrounding vegetation could come in and intertwine with the space. Therefore, there are various different seating areas and furniture layouts, featuring teak wood and outdoor fabrics by Jim Thompson, in natural tones, that feed into this concept of nature taking over the terrace. There are also plant pots from L’Empordá, and various low plants that do not block the views of the abbey. The warm and subtle lighting provides a sense of luxury and intimacy, along with the timeless, comfortable and functional furniture and features. But most surprising of all is the Tribù fire bowl at the centre of the space, evoking Ancient Greece. It was created for Abadía Retuerta by the architect and interior designer Daniella Bruzual.

 Locally-sourced produce and ingredients from the vegetable garden
The menu at the Terraza de la Hospedería offers a gastronomic experience based on comfort food, for a light bite at any time of day. Its cuisine is more informal and laidback, and made with locally-sourced and seasonal produce, including fresh ingredients from the Monks’ Vegetable Garden on the Abadía Retuerta estate itself. Since the start of this year, chef Ramón García has been leading the restaurant team at the hotel LeDomaine, while Marc Segarra, head of gastronomy at Abadía Retuerta, has been overseeing all the gastronomic offerings at the resort. Furthermore, Segarra is exclusively in charge of the menu at Refectorio, the estate’s flagship restaurant.

There are many exciting new dishes to try at the Terraza de la Hospedería, including a quiche with Abadía Retuerta pine nuts and green salad from the Monks’ Vegetable Garden; homemade brioche with Medina del Campo king prawns; and even a bagel (made in the estate’s own bakery) with smoked salmon and Valladolid burrata. There are many other delights on offer too, such as the terrace’s own signature cocktails. Refreshing long drinks such as the Abadía Cosme or the Danzante (“the Dancer”) are the perfect way to round off a memorable experience at this glorious summery terrace.

Harmony, tranquillity and purity, over excellent food, a cocktail or two, with some stargazing and fine art — this is the new open-air terrace at Abadía Retuerta. This summer, there’s no better place for a summer’s day (and evening) to remember.
