The Monte-Carlo Bay Hotel & Resort is a leading pioneer in sustainable development and was one of the first hotels in the Principality to receive the prestigious Green Globe environmental certification in 2014. Recently, the hotel was awarded Gold Certification in recognition of its commitment to green practices over five consecutive years.

Green Globe’s Gold standard is a rigorous level of certification, which only the Monte-Carlo Bay Hotel & Resort and Monte-Carlo Beach have achieved to date in the Principality.

A pioneering institution in sustainable development
As a flagship and pilot Green hotel of the Société des Bains de Mer., the Monte-Carlo Bay Hotel & Resort received its inaugural Green Globe certification on 23 April 2014. The property’s ongoing commitment to best practices has been acknowledged through maintaining a high-level performance as required by the Green Globe international label and last month in June, it was successfully awarded the Gold Standard.

Frederic Darnet, General Manager of the Monte-Carlo Bay Hotel & Resort, congratulated all the teams and said, “This Green Globe Gold Certification is not an end but a beginning and I would like to congratulate our Bay Be Green Team for this daily commitment. We must take into account the environmental, economic, industrial and even societal impact of any action we take.”

Team members give back to the community
The Monte-Carlo Bay Hotel & Resort’s Bay Be Green Team, founded in 2013, remains a dedicated team that organizes environmental and social initiatives. The Team is actively involved in various social campaigns throughout the year, organising events such as a community lunch with the Fourneau économique de Nice and the Solidarpole association where Chef Marcel Ravin and the Bay Be Green team prepared and served a lunch for two hundred people in need. The Team also collected toys with SIVOM for the Restos du Cœur, a French charity whose main activity is to distribute food packages and hot meals to the underprivileged.

Furthermore, team members participated in the Run No finish Line and ran environmental awareness workshops for children at Monacology, a one-week educative village for children from the Principality and bordering towns. This year, the Bay Be Green Team chose a wellbeing and health theme where children revealed sugar hidden in their favorite foods, and played a fruit and vegetable abecedarium activity.

Michelin starred and committed Chef Marcel Ravin
Sustainable development is a key focus in resort kitchens as well thanks to Chef Marcel Ravin, a Michelin starred chef who promotes the benefits of growing and eating good food as well as taking actions to protect the planet. His all-encompassing vision highlights the stages that food passes through from ground to plate.

Chef Marcel collaborates with Jessica Sbaraglia and her start-up company Terre de Monaco, which creates urban organic vegetable gardens including the one at Monte-Carlo Bay. Having seasonal fruits and vegetables, harvested nearby is most important for Chef Marcel. At Monte-Carlo Bay’s signature restaurant, Blue Bay, the produce picked a few steps from the kitchen is at the centre of all dishes. In addition, last year the restaurant signed the Mister Good Fish charter, which lists recommended seasonal species thereby respecting local marine resources.
